Ingredients:
- 1 lb carrots
- Zest and juice of 2 limes
- 1 tsp sesame oil
- 1 tsp fish sauce
- 1 tsp sriracha
- 2 tsp brown sugar
- 1 Tbsp sesame seeds
- 1 bunch cilantro, chopped
- Salt to taste

Instructions:
Using a vegetable peeler, shred the cleaned carrots into ribbons. In a large bowl combine the remaining ingredients and whisk together to combine. Add the carrot ribbons and toss to combine. Taste for salt and season if needed to your preference.
